Cheesy Polenta

This is a really nice alternative to mashed potatoes.  Super creamy and you can add what ever cheese you like to change up the flavor. After much experiments, I’ve recently discovered that I’m lactose intolrent, (which can be part and parcel with being Celiac) I’m still able to eat cheese and yogurt. The first few times I made this recipe I used 2% milk and the flavor doesn’t change using the lactose-free milk, also try adding chicken of veggie stock, in place of the water for a richer flavor.

“This rich, cheesy polenta is the perfect foil for pork, chicken, beef, or fish dishes.”
Ingredients:
2 cups Lactose-free milk
2 cups water (replace with chicken or veggie stock if preferred)
1 1/2 teaspoons kosher salt
1 cup polenta or yellow cornmeal
1/2 teaspoon freshly ground black
pepper
4 tablespoons unsalted butter
4 ounces grated Parmesan cheese
Directions:
1. In a large pot over medium-high heat, bring milk, water, and salt to a boil. Gradually whisk in polenta. Reduce heat to low, and cover. Cook 20 minutes, until creamy, lifting the lid and stirring every 3 or 4 minutes to prevent sticking. Remove pot from stove, stir in pepper and butter. Gradually stir in cheese. Serve.
