Chipotle Crusted Pork Tenderloin

This is probably one of the best pork tenderloin recipes I’ve ever made. Juicy, spicy and melt in your mouth tender. I made a few changes to the original one below. I added half a can of chipotles in adobo sauce in place of the chipotle powder, and added fresh garlic. I also let it marinate for a few hours and then did it in the oven (375 for 40 mins) since it was raining here that day.  Serve with creamy cheesey polenta and sauteed baby zucchinis, absolutely amazing.

Chipotle Crusted Pork Tenderloin

Prep Time: 15 Minutes
Cook Time: 20 Minutes
Ready In: 35 Minutes
Servings: 6
“Sweet and spicy rub for pork tenderloins. Just coat, let stand for 20 minutes and grill! Goes great with polenta or mashed yams.”
Ingredients:
1 teaspoon onion powder
1 teaspoon garlic powder
3 tablespoons chipotle chile powder
1 1/2 teaspoons salt
4 tablespoons brown sugar
2 (3/4 pound) pork tenderloins
Directions:
1. Preheat grill for medium-high heat.
2. In a large resealable plastic bag, combine the onion powder, garlic powder, chipotle chile powder, salt, and brown sugar. Place tenderloins in bag and shake, coating meat evenly. Refrigerate for 10 to 15 minutes.
3. Lightly oil grill grate, and arrange meat on grate. Cook for 20 minutes, turning meat every 5 minutes. Remove from grill, let stand for 5 to 10 minutes before slicing.
